This banana bread is sugar free and is made with extra virgin olive oil, whole wheat flour, kefir and tahini for extra protein and probiotics.
All the goods in one piece of cake!

Ingredients
2 ½ big organic bananas (one cup of mushed bananas)
1/3 cup Eumelia Extra Virgin Olive Oil
2 organic eggs
2 tbs honey
2 tbs organic tahini
½ cup kefir
2 cups organic whole wheat flour
1 tsp baking soda
1 tsp vanilla extract
½ tsp cinnamon
½ tsp sea salt
Method
Preheat the oven in 160 °C with the ventilator and oil or butter the baking tray.
In a big bowl mush the bananas, add the olive oil and the honey and whisk to combine. Add the two eggs and whisk to combine. Then add the kefir, the tahini, the vanilla extract, the cinnamon, the salt and the baking soda. Whisk just until combined.
Add the flour one spoon at the time and whisk until combined.
Toss the cake mixture in the tray and bake for 50 minutes or until a toothpick inserted into the cake comes out clean.
Let the bread cool into the pan for about 10 minutes, then let it cool in a rack before you slice.
